Question about apple stack cake

I helped my grandma make an old-fashioned apple stack cake before she passed away a few years ago. I don't remember one thing though. I have cooked the dried apples and am ready to add the spices. Do I drain all the liquid off the apples before I stir in the spices or do I leave any of the juice on them?
