Help with how to make a good pork roast?

I have made pork roast many times but I have never been really impressed with how it has turned out. We had a whole hog butchered and I have a couple nice pork roasts and I could really use some great advice as to how you cook it to make a delicious meal. TIA

Heres my recipe for Pork Roast.

My Pork Rub Recipe:

1 teaspoon garlic powder
1 teaspoon onion powder
1 1/2 teaspoons dried thyme
2 tsp of salt
2 tsp's of pepper.

I mix this all together then I take my pork roast, rub olive oil all over it, put it in a roasting bag, then sprinkle the rub seasoning all over the roast making sure its coated with the rub.

I tie up the roasting bag after the meat is coated and I let it slow cook on 250 for about 4 to 5 hours. You can also make the roast in a crock pot.

Just before the meat is done when cooking it in the oven slit the top of the roasting bag and expose the top of the roast so it will brown nicely giving the top a bit of a crispy texture.

I butterfly mine and rub it with chopped garlic, salt,pepper, then I take a piece of spicey sausage like Chorizo or linguica and lay the links length wise in the roast then close it up and tie it together then I chopped another 2 cloves of garlic and rub it on the outside with salt,pepper and put it in a reynolds cooking bag with some carrots and potatos and cook it at 325 for about 2 hours. Comes out yummy. When you slice into it the sausage is in the center of the meat and gives it great flavor.

I use Garlic Salt, Onion Powder, Pepper all over Roast and rub in. Top with sliced onions. Put in Covered Roaster and cook 15 mins per pound. Uncover last 10 mins to brown a bit.

For gravy, I use the Sams Club Gravy, or packets, and strain the drippings into gravy mix. Whisk well and wait till it thickens.

I just put salt & pepper on mine and bake it in a 325 oven until it's done. Simple, but good! I like to eat a few drops of Tobasco sauce on it.

I have two recipes for pork roast that we like.

Roasted Pork
1 pork roast
3 garlic cloves
Adobo seasoning (found in the mexican section at the grocery store)
1 packet Sazon (Found in the mexican section at the grocery store)
lime juice

Make 3 slits in the top of the roast and insert a garlic clove in each. Place on a roasting pan. Sprinkle adobo seasoning on roast and rub in. Sprinkle the packet of sazon on next. Squeeze 1/2 of a lime over the roast and put in 375 oven for 1 hour or so until done.


Crock pot Pork Roast

1 pork tenderloin
3 cloves garlic
1 small onion, sliced in rings
4-5 med. Potatoes
4 carrots, cut in chunks
1 can green beans, drained
1 jar horseradish
1/2 cup water
salt & pepper

Spray crock pot with Pam, Place onion, potatoes and carrots in bottom of pot. Place roast on top of veggies. Make 3 slits in top of roast and insert a garlic clove in each. Pour green beans around roast. Spread horseradish on top of meat. Pour water gently on meat and veggies. Sprinkle with salt and pepper. Cook on low for 8-10 hours.

I use Chorico alot. Since we live right on the border of Fall River and New Bedford I can get fresh linguica or Chorico anytime.
