Covered Dish Ideas?

Going to a sports banquet that is covered dish..... The paper says " please remember there is little or no electricty so food should be brought hot"....

Any ideas on a cold item or hot to bring?
We also need a dessert...thought cake????

Fresh fruit and veggies maybe?

When I was a teen we had band banquets, buckets of fried chicken were very popular (sounds so easy too, no cooking and nothing to bring home and clean).

There was a woman who would bring in a cake to work every so often and it would disappear QUICK. If it wasn't a "Pig Pickin' Pie" it was very close. My mother made me something like that for my birthday once and decorated it with green coconut and Peeps since my birthday is in March (spring/Easter theme I guess).

lasagna? it's prety dense so stays pretty warm and it doesnt have mayonnaise or anything too spoil-able.

a veggie and dip tray? or chips and salsa? neither or those require much of anything

scalloped potato casserole? that stays warm easily when covered

How about rolls? Those don't necessarily have to be hot.

If you're going to do a desert, I'd try to avoid cream pies or anything with whipped cream topping. Maybe just a sheet cake or something.

This was posted a few threads down. The OP and I both made it and loved it. I did end up using more dressing than called for, 'cause my potatos just absorbed all of it immediately. It would be just right for a potluck with no electricity!

Italian Potatoes
Serves 16

14 or 15 large red potatoes (about 5 pounds)
Salt and pepper
1/2 cup chopped fresh parsley leaves
1/2 cup chopped green onions
3 large cloves garlic, thinly sliced
1 heaping teaspoon salt
1/2 teaspoon dry mustard
1 scant tablespoon sugar
1 tablespoon Worcestershire sauce
1 cup olive oil
1/2 cup tarragon vinegar

Place potatoes in a large pot and cover with water. Bring to a boil,
generously salt the water, and boil the potatoes until tender, approximately 30 to 40 minutes. Drain and let stand until cool enough to handle. Peel potatoes, if desired, and cut into 1-inch chunks. Place cut potatoes in a large bowl.

Sprinkle parsley and green onions over potatoes. Make the sauce by mixing the rest of the ingredients together in another bowl; then pour sauce over the potatoes.

Stir well. Let stand all day, or at least for 4 hours, stirring every hour. Do not refrigerate. Serve at room temperature.

Something in a crock pot would be good since even after you unplug it, it stays pretty hot for awhile. Maybe Chili?
