Here is a Family recipe from a friend of mine whose a professor from Greece. Mrs Antonakais Tzatziki Sauce for Gyros Ingredients: 1 (8 ounce) container plain yogurt (Preferably Greek yogurt or Fage) 1 cucumber 1 tablespoon olive oil 1/4 lemon, juiced and zest 1-1/2 teaspoons chopped fresh dill 1-1/2 cloves garlic, peeled 5 Mint Leaves, chopped fine Salt and Pepper to taste Jims Granny places the yogurt in a paper towel lined strainer over another bowl and leaves it in the fridge overnight to thicken. Next she peels and seeds cucumbers, covers them with salt and strains them in a strainer. That takes out most of the liquid in the cuke and it will thicken up your sauce even more. make sure a lot of the liquid is gone from the cukes and yogurt before you mix them in the blender. In her blender she puts all the ingredients, mixes it together then refridges it overnight. Make sure you strain the yogurt and also the cukes or the sauce will be watery.
