When I prepare chicken salad (or chicken pot pie/chicken and dumplings, etc.), I use a marinade or rub and either grill or roast the chicken. IMO, it adds more flavor and a better texture to the meat than poaching does.

You and I are on different ends of the scale when it comes to chicken salad. I love dried cranberries and toasted nuts in mine and some sugar too. But in your case, I would suggest either or both a little mustard and some very finely chopped onion. A little sour cream mixed into the mayo might be nice also. I think I would mix the mayo with the onion, mustard, sour cream before mixing the other ingredients into the salad. Do you like dill? That might be nice also. Now I am not suggesting you use all my suggestions at once, but one or two might work together, like the sour cream would work with the dill, the onion, or the mustard, but I am not sure about mustard and dill together. And often I find when I feel something is missing, it is often something as simple as salt or pepper.

I always crush a can full of the french fried onion rings and add it to mine, it makes all the difference to me as I too am a chicken salad purest

I've been making it with just mayo, celery, and onion and everyone has been raving about it at work. A HUGE dish of it goes every potluck day.
