Why is my chicken salad always flat?

I love making chicken salad to eat in the summertime, on nice buttery croissants. I love the Sam's Club chicken salad, but it's about $3.50 per pound, so I try to make my own to save a few bucks. I just can't ever seem to nail it. I have tried Catt's Chicken salad recipe, and everyone who ate it raved about it, but I am a purist-I need a totally mayonaisse based chicken salad And forget the sweet stuff-no apples, raisins, nuts, etc. I usually overseason my chicken breasts when I boil them (salt, pepper, garlic powder, poultry seasoning, and bay leaves). Then to my chicken salad I add lots of chopped celery, and a repeat of the above spices. Today I even added some "Jerk" seasoning, and it still was missing something. Does anyone have a clue as to how to help me help my chicken salad? TIA! Lynne

When I prepare chicken salad (or chicken pot pie/chicken and dumplings, etc.),
I use a marinade or rub and either grill or roast the chicken. IMO, it adds more
flavor and a better texture to the meat than poaching does.

You and I are on different ends of the scale when it comes to chicken salad. I love dried cranberries and toasted nuts in mine and some sugar too. But in your case, I would suggest either or both a little mustard and some very finely chopped onion. A little sour cream mixed into the mayo might be nice also. I think I would mix the mayo with the onion, mustard, sour cream before mixing the other ingredients into the salad. Do you like dill? That might be nice also. Now I am not suggesting you use all my suggestions at once, but one or two might work together, like the sour cream would work with the dill, the onion, or the mustard, but I am not sure about mustard and dill together. And often I find when I feel something is missing, it is often something as simple as salt or pepper.

ooohhhh! Never thought about doing this!-- wow!

I'm not a purist and just love a chunky chilled Chicken salad... Chicken, Walnut, Grapes, spices, Miracle Whip, pickle relish and crumbled bacon on top right before serving... dull I know but it uses up the leftover baked chicken right?

Gonna Surprise DH with a "different" recipe next time!---

I've been making it with just mayo, celery, and onion and everyone has been raving about it at work. A HUGE dish of it goes every potluck day.

I add chopped or crushed pineapple in mine.

I also don't care for Catt's chicken Salad. Taste too blah for me.
