We are having beef enchiladas for supper,I have a big tossed salad in the fridge but feel like I need something else to go with it. I'm using low carb wraps for the enchiladas so trying to keep the carb count low. Any suggestions for side dish will be appreciated! TIA

I'm sorry Dianne. No clue what's low carb or not (which probably accounts for my waistline). I'm from El Paso, TX and they're always served w/ Mexican rice, refried beans, and shredded lettuce and tomato.

Thanks anyway! I ended up having left over side dish from last night with Rotel,corn and okra,it went well with our enchiladas.

I don't know I have never had them but I would say you can't go wrong with a salad or just some fresh veggies.
