What's for dinner on Wednesday?

I pulled a small mexican lasagna out of the freezer for us. It's just me and DH, so that will be just fine. I also have leftover black beans and jasmine rice from dinner on Monday, so we might have that, too. Hmmmm, come to think of it, I also have some homemade salsa in the freezer. I think I'll get that out, too.

Well, I'm either making cheesy chicken noodle casserole or chicken bundles. I have been craving the bundles for a while now but dh says they are too rich. Puh-lease....how can anything be too rich? And since I'm the one who is making dinner, guess it's MY choice!! hahaha Soooo......

Chicken bundles
Mac 'n cheese or a noodle dish of sorts (or neither....)
Peas and carrots

I think I'm going to make cream cheese chicken (in the oven since I didn't start it in the crockpot this morning). We'll have mashed potatoes and green beans with it.

We played around a new whole-grain rice called Wehani and made a batch of Dirty Rice (minus the gizzards and livers!)

Me, too! Me, too! What are the chicken bundles???? Anytime anyone says they are too rich, I want to know what they are!!!!

Oh, BTW, ended up going out to dinner. Dh and I went to a local restaurant for boiled crawfish. Hadn't had any this season and it was so GOOD!!!!!

DH will be having dinner with people from work tomorrow, so I guess it will be mexican lasanga for me!

Here's the recipe for the cheesey chicken casserole, I posted a new thread with the chicken bundle recipe.

2 cans chicken (or cooked chicken breast)
1 can cream of chicken soup
1/2 cup milk (give or take)
shredded cheddar cheese (as much as you'd like)
cooked egg noodles

Mix all together (I cook the noodles, drain and mix everything right in the pot I cooked the noodles in) and pour into a greased casserole dish. Bake at 350* until hot and bubbly.
