Extra Sharp Macaroni and Cheese

This is my Aunt (from Syacuse NY)'s recipe ...its really great, so I thought I would post it...I usually double or more it, and eat it as a main dish during lent

Sharp Macaroni and Cheese
350 oven
Cook and drain 8 oz macaroni, place in buttered casserole dish

mix in a saucepan over low heat
1/4 cup margarine
1/4 cup flour
1/4 tsp salt (I omit his, I think the cheese has enough saltiness)
add 3 cups milk,
8 ounces (two cups) shredded extra sharp cheese (you can make it with any cheese, or even cheese ends, but for the sharp taste unique to this dish, use the sharpest cheese you can get)
stir until cheese is melted,
pour over macaroni...you can top with buttered bread crumbs or crushed chips (I usually leave the top plain) and bake for 20-25 minutes
let it set a few minutes before you serve

That sounds good. I usually add a package of little smokies to my homemade mac & cheese.

The little smokies idea sounds good too...Sometimes in the summer I throw in a chopped up jalapeno. My MIL makes her mac and cheese like this
8 oz cooked medium shellpasta
1lb ricotta
1 cup mozzerella
I can diced tomatoes

cook shells, drain and toss in ricotta, half the mozzerella and the tomatoes. Bake at 350 for 15-20 mins, top with remaining mozzerella and put under broiler to brown cheese....
YUM...also something useful to make with all those tomatoes I will be canning

Brenda are you my long lost niece? LOL!!??!! That is how I make it too. I saute a small diced onion in with the butter first then add the flour and milk. Sometimes I also throw in a small chunk of jalapeno cheese in with the extra sharp cheddar, it gives it a nice little kick.

I made this last night for dinner. I also grilled up some bratwurst and served it with some corn.
YUMMY!! I didn't have sharp cheese so I used mild cheddar. I used crushed reduced-fat cheez-its as the topping and it was soooo good!

I also use extra sharp chedder in my mac and cheese. Also sometimes we brown some breakfast suasage and throw it in.
