I was in the kitchen all day baking: 5 dz. No Bake cookies, a HUGE batch of M&M Monster cookies and 6 dz. Peanut butter & Oatmeal dog bones for the puppies. I figured while the oven was on I might as well make Lasagna. So we are having that and garlic toast w/mozzarella cheese for dinner |

we grilled some of the honey suckle white marinated turkey breast tenders! boy are they good! also made some wood tick salad!

| It's really easy. Just take 4-6 frozen boneless chicken breasts and put them in the crockpot. Then throw in one 15 ounce can of black beans (drained and rinsed), one 15 ounce can of corn (drained), and one 15-16 ounce jar of salsa. The recipe says to cook it on high for 4-6 hours, but my chicken breasts were small, so I cooked it on low for 6 hours and that was plenty of time. About a half hour or so before serving, throw in 8 ounces of cream cheese so it will melt. Some of the reviews suggested using thawed chicken breasts because you get a lot of juice using frozen ones. When I got home from work, I just took the chicken breasts out, ladled out most of the juice, cut the cream cheese into smaller pieces and stirred it into the beans and corn, and then put the breasts back in and let it simmer for another hour or so. I made extra breasts so today, I will shred those and mix them with the leftover corn/bean/sauce mixture and use it to make some enchilladas for the freezer. If there's enough of the filling left, I'll put it in a small casserole, top with cheddar cheese, and nuke it to use as a dip with tortilla chips.
