do you make muffins?

I make muffins alot and freeze them for the days we want them! since there is just the 2 of us they get stale fast if I don't put them in the freezer!
heres a couple of the newest ones we really like!

Raw Apple Muffins

4 cups peeled and diced apples(I used fuji)
1 cup sugar(I use splenda)
2 eggs
1/2 cup vegetable oil(I use half oil and half plain yogurt)
2 teaspoons vanilla
2 cups flour
2 teaspoons baking soda
1 tablespoon cinnamon
1 teaspoon nutmeg
1 cup raisins
1 cup chopped walnuts

spray 16 muffin tins with pam

mix together all the dry ingredients in one bowl and all the rest in another bowl, then mix the dry mixture into the wet just enough to blend, don't over mix!
use your icecream scoop to fill muffin tins to the top, these don't raise a whole lot! bake on 325 for 25 to 30 minutes!
these are really moist yummy muffins

peanutbutter, banana, chocolate chip muffins

1 3/4 cup flour
2/3 cup sugar(I use 1/2 cup splenda)
2 tsp baking powder
1/2 tsp salt
1 cup plain yogurt
2 lg or 3 small ripe bananas
2 eggs
1 cup peanutbutter(I like chunky)
1/2 cup chocolate chips

heat oven to 350
in a lg bowl combine the bananas, eggs, yogurt and peanut butter until throughly combined.
in another bowl combine all of the dry ingredients then mix the dry ingredients and the chocolate chips into the wet until they are just combined, do not over mix!
scoop into 12 muffin tins that have been sprayed with pam bake approx. 30 minutes untill tops spring back when touched.

I make muffins the easy way, 1 box of cake mix and 1 small can of pumpkin.
Mix, spread in muffin tins and bake.

My favorites are carrot cake, spice cake, and others along that line, things
that you would normally think of for breakfast. But this recipe works for all kinds
of cake mix.

The muffins are very moist, and nothing can be easier than this!

Buttermilk Oatmeal Muffins

So glad that someone else appreciates muffins. I found this recipe and find it to be healthy and delicious.

1 cup quick-cooking oats
1 cup buttermilk
1 egg, beaten
1/2 cup packed brown sugar

Buttermilk Oatmeal Muffins

Sorry, my first attempt messed up. Not very good at this.

To start again:

1 cup quick-cooking oats
1 cup buttermilk
1 egg, beaten
1/2 cup packed brown sugar
1/4 cup vegetable oil
1 cup flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt

Soak oats in buttermilk for 15 minutes. Stir in egg, sugar and oil. Combine flour, baking powder, baking soda and salt; stir into oat misture just until moistened. Filled greased or paper-lined muffin cups three-fourths full. Bake at 400 degrees for 16-18 minutes or until muffins test done.

I prefer to get creative with these muffins and add a little cinnamon, nuts and raisins or craisins. Just discovered craisins and they are wonderful. Makes for a very healthy snack.

I've also found that just about and quick bread (sweet bread) recipe will do just fine for muffins!
muffins help me portion control them!

Just add the pumpkin to the dry cake mix, and don't add anything else. Its similar to adding applesauce instead of eggs and oil. The pumpkin takes the place of all the other ingredients.
Pour into cupcake liners in the muffin pans and bake as directed. Check for doneness.

Someone that was going to weight watchers gave me this "recipe". It cuts the fat out and adds fiber to the cupcakes, and you don't taste it at all.

I was about to be impressed by how short the recipe was! That sounds good, especially with the dried fruit.

I like these loaves made in muffin tins. You really should toast the nuts, it doesn't take long, and tastes really good.

You can make muffins out of anything! Meatloaf muffins, mashed potato muffins, taco muffins, the typical dessert muffins, we put lots of things in muffin tins.

We are going to the Pitt game on Saturday. I was supposed to bring something for a tailgating breakfast/brunch. I just decided to make some muffins. I made 2 batches, 1 from a lemon cake mix and 1 from a spice cake mix. They are baking now!

My kids love the Dunkin Donuts choc chip muffins. I had posted a recipe request for them here, and people advised me to try the premade mixes. I did, and that is what I use now, the Krusteaz brand. Also, my kids love jiffy mix corn muffins.

OK, I have to ask..if you make muffins from cake mix how are they different from cupcakes?-

My friend Lisa will combine one jiffy mix corn muffin and one jiffy mix white cake mix and it comes out really good!

Its the 15 oz can of pumpkin. You can also add nuts, raisins, etc to the batter. The batter is very thick
when you mix it. They are better after they sit overnight.

To answer another question, how are they different from cupcakes,
They seem to come out much moister than a cupcake, and much heavier.
I don't frost them either

I've been looking for a really good Lemon Muffin recipe for years. I've tried serveral but they just need a little something tweaked or something else.. I don't know, I can't put my finger on it... still searching.

I’ve had this recipe for a long time, but have never prepared them. I like the recipe because I think
the fresh chopped oranges, orange sugar/butter would definitely give them a very “orangey” flavor.
Maybe you could try it with lemon. HTH


*Orange Sugar:
grated zest from 3 large oranges
¾ teaspoon cinnamon
2 cups granulated sugar

Place the zest, cinnamon and sugar in a food processor or blender. Process
until thoroughly mixed. Store in an airtight container in the refrigerator.


*Orange/Honey Butter:
½ cup butter, softened
¼ cup honey
1 tablespoon grated orange zest

In a small bowl combine the butter, honey and zest. Mix until well blended.
Cover and refrigerate for at least two hours.


(makes about 1½ dozen)
½ cup butter, softened
*1¼ cups orange sugar, divided
2 eggs
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 cup buttermilk
½ cup golden raisins, plumped
½ cup fresh orange, diced
1 tablespoon butter, melted
*orange honey butter

Preheat oven to 350* degrees. Grease and flour muffin tins.

In a large bowl, cream together the butter and 1 cup of the orange sugar until
smooth. Add the eggs and beat until fluffy. Set aside.

In another bowl, sift together the flour, baking powder and the soda. Add the
mixture to the creamed mixture alternately with the buttermilk, beginning and
ending with the flour mixture, and beating after each addition until well blended.
Fold in the raisins and orange.

Fill each muffin cup 2/3 full with the batter and bake about 15-18 minutes or until
a tester comes out clean. Remove from the oven, place the pan on a wire rack and
let them cool slightly.

While the muffins are still warm, brush the tops lightly with melted orange butter
and sprinkle with orange sugar. Serve the remaining orange butter as a spread
for the muffins.

they are not really except usually you put extra stuff in the muffines like chocolate chips , dried fruit or nuts instead of frosting!
also you don't mix it as much, over mixiing makes them more cakelike or even tough but just barley mixing makes them ........muffiny!
and easy lemon poppy seed muffin is 1 yellow cake mix mixed up with the called for ingredients then add one box of lemon pudding mix and a tablespoon of poppy seeds

Just put what you would in a taco and put it in muffin tins. I really have no "recipe" per se. I just put meat or rice mixture or both with cheese, salsa, seasoning then put some onion and tomato and sour cream on it before eating.
