Here are the recipes posted from the following thread over the past few years: Original thread Appetizers Mexi dip Where ever I have taken this recipe, people always want the recipe. It is a bonus that it is so easy to make. 8oz softened cream cheese 8oz shredded cheddar cheese 8oz sour cream taco seasonings... I use between 1/2 - 3/4 of the packet mix all together. It is easier to dip chips in if it has sat out for a bit. I serve with tortilla chips and veggies. ************************************************** ************************************************** ***** I make a shrimp spread for crackers that is so simple! 1 container chives and onions cream cheese 1 can baby shrimp Mix together in a bowl mashing up the shrimp. Refrigerate a couple hours to blend the flavors. ******************************* Not mine.. but my sister in laws for parties.. she gets crescent dough.. pop it open and keep it whole.. don't rip it into triangles... cover a block of cream cheese.. and bake acording to directions on can... serve warm with crackers.. you can use blocks of flavored ones.. or add herbs to a block and then bake.. whatever,.... easy and yummy . I asked her for the recipe.. ************************************************** ************************* I make a seafood spread for crackers. I take a couple of cans of crab meat, a container of cream cheese and some seafood sauce. Mix it up with an electric mixer to taste and it's delicious. Takes all of two minutes to make. Just don't use too much of the red seafood sauce because it'll make it too spicy tasting. Just add everything to taste ************************************************** ******************************** artichoke dip Canned artichoke hearts (1 or 2, depending on amount desired - not the marinated kind) Mayonnaise diced jalapenos to taste (fresh or canned) Freshly grated parmesan I smash the artichoke hearts with a fork, mix in enough mayo until the texture is right, add several diced jalapeno rings to taste(I just use jarred) and add a bunch of parmesan, both mixed in and again on top. It can be heated in the oven or microwaved, and served with sliced baguette, crackers, or whatever you have on hand. ************************************************** ************************************************ I do the block of cream cheese with Jalapeno Jelly over it to serve with crackers (We like wheat thins). You can also put any gourmet jelly over it, we like ones with habanero peppers or horseradish in them. My son sent me some really good salmon for Seattle and this idea was listed on the package. Didn't sound too good but tried it and we really like. I take one pkg cream cheese 1 can hormel chili Mix in skillet Serve with tortilla chips. We also add cheddar cheese sometimes. Very simple to make and delicious to eat. I made these at a recent block party and they were gone within minutes. Cut recipe down for a smaller group. You can also use a crock pot instead of the oven which is what I did for the block party. Approx. 8 dozen frozen (already cooked) meatballs Sauce 1 bottle hot or regular ketchup 2 tablespoons cornstarch 1 jar [12 oz] apple jelly 1 jar [12 oz ] currant jelly Combine ketchup and cornstarch in roasting pan. Stir in jellies; add the meatballs. Cover and bake for 30 minutes at 350. Yield: about 8 dozen. ************************************************** *********************************** Olive spread 1 block cream cheese 1 sm jar chopped olives 1 tsp horseradish mix well and refrigerate ************************************************** ************************************************** ******* Easy appetizer Everyone love these when I bring them to a party, and they are really easy to make Raspberry Brie Phyllo cups you buy the frozen phyllo cups at the grocery store they are small little cups that you fill and bake you put some brie cheese in each cup and bake according to package directions remove from oven and top with a bit of raspberry preserves then you can top with a few toasted slivered almonds. they make a great presentation and taste delicious. ************************************************** ************************************************** ******** yummy dip chop 1 Vidalia onion (must be vidalia) so it's about 1 cup 1 cup shredded swiss cheese ************************************************** ************************************************** ********** great dip 1 vidalia onion (must be vidalia) chopped, should measure about 1 cup 1 cup shredded swiss cheese enough mayo to stick it all togetther mix all in a bowl and pour into an 8x8 baking dish. bake until cheese is melted. serve with crackers or whatever. It's so good. ************************************************** ********************** 1 pkg cream cheese and pour a dab of alberts hotsauce on top microwave for 2-3 minutes til soft mix together and use as dip ..i love this with lays potato chips ************************************************** **************************************** Simple appetizer Place the following three items on a toothpick after cuting them up in cube type pieces (need a jar of dill pickles, package of smokey links cooked, cheddar chesses) dill pickle piece smokey link piece cheddar cheese cube Weird combination but goes quickly.. ************************************************** ************************************************** ***********

| Beverages The mother of my HS boyfriend used to treat us to orange shakes. She put about 1/3 can frozen orange juice concentrate into blender w/vanilla ice cream. YUM! ************************************************** ************************************************** ** Iced Coffee 6-8 cups strong coffee (I like more because its too sweet otherwise) 1 (14 oz) can sweetened condensed milk Combine brewed coffee and sweetened condensed milk in a large pitcher. Refrigerate until chilled. Serve over ice. TIP- Use leftover coffee to make coffee ice cubes with then you have the chill without watering it down. ************************************************** ************************************************** **********

| Breakfast Breakfast Quick Cinnamon Rolls Easy Pecan RollsTake a tube of crescent rolls (or regular dinner rolls) open, flatten each roll a little, and spread generously with Heloise's cinnamon butter. Roll up and bake according to the directions on the tube (if using glass baking dish lower temp 25 degrees) You can add nuts & raisins if you like. Cinnamon butter 1/2 pound butter 3 tablespoons cinnamon 1/2 pound powdered sugar Combine ingredients and mix well using an electric mixer. Store in an airtight container in the fridge. ----------------------------------------------------------------------------------- 1/2 cup chopped nuts 18 frozen rhodes rolls 1 small package COOK N SERVE butterscotch pudding 1/2 cup melted butter or margarine 1/2 cup brown sugar 3/4 tablespoon cinnamon Put chopped nuts in the bottom of a greased bundt pan (or angel food pan with tin foil covering the bottom). Place the frozen rolls on top of nuts. Sprinkle the pudding mix on top. Mix melted butter, brown sugar, and cinnamon and pour over top of rolls. Keep uncovered on counter over night or in a cold oven. Bake next morning at 350 for approx 30 minutes (start checking doneness at 20 min) ************************************************** ************************************************** ******* Another quick and easy one when you have company for breakfast -- cinnamon rolls. Take a package of Grands biscuits and roll them in a plate that has cinnamon and sugar mixed together, also do the top and bottom of each biscuit. Cook per directions on package. Can't get easier than that! ************************************************** ************************************************ Breakfast potatoes...the Lipton Secret way... 1 lb to 1.5 lbs. baking potatoes, cut into chuncks. Toss with 1/3 C oil. Mix in a package of Lipton's dry onion mix (comes in a package of 2). Bake at 450 for 20 minutes...flip...bake 20 more. My favorite potatoes under the sun! *************************************** 'Egg with a hat'I have made these for my sons and my grandchildren when they were little ones. They think I invented this, and I have never told them any different. Take a slice of bread and cut a hole in center with a juice glass. Put butter in fry pan, add slice of bread and the circle. Add the egg in the hole. When toasted flip the egg and the circle. When toasted put on plate and put the circle on top. And there my friend, is your 'Egg with a hat' ************************************************** ************************************************** **** BIRD'S NESTS place 6 slices of bread on cookie sheet. Seperate 6 eggs, beat egg whites till peaks form, spoon whites on bread and make a well in the center, put the egg yolk in the center. | Desserts 1 Desserts Store-bought angel food cake frosted w/whipped topping blended with malted milk powder. ************************************************** ************************************************** ******* This is my simple party dessert. Make a pan of brownies from a mix. If you want, you can leave them plain or add peanut butter chips to them before baking. For icing, melt a cup of chocolate chips with a cup of creamy peanut butter in a small pan over medium low heat until the chocolate and peanut butter are combined. Pour over brownies, cover pan with foil and let cool on the counter. The icing is glossy and pretty and it tastes like a reese's peanut butter cup. ************************************************** ************************************************** ****** Buy a lemon angel food cake, make holes with a fork in the cake, pour lemon jello (made with the boiling water and cold water) into the holes. Refrigerate for a couple hours. Optional: put a little Cool Whip on top. ************************************************** ************************************************** ***** Quarter some pears in a baking pan with plenty of apple cider, cinnamon, sugar, and butter. cover with foil and roast in the oven until nice and tender. (You can take off the foil at the end if you like.) Eat while hot, topped with cold whipped cream. ************************************************** ************************************************** ********* This one sounds really weird, but it is fabulous -- give it a try. Slice some strawberries, put them in a bowl, pour in enough balsamic vinegar (yes, I'm not kidding) to cover them, refrigerate for several hours. We serve this every Easter, and our skeptical guests always end up gushing over it. ************************************************** ************************************************** ****** Chocolate cookies (Mother's Brand has a chocolate cookie w/walnuts that works great, but one w/choc. chips is also good. Just not 'creme' cookie) Place a layer of cookies in the bottom of a bowl. Crumble up a couple of cookies f/the 'cracks' between cookies. Spread layer of Cool Whip over cookies. Repeat until cookies are used up...or the Cool whip...or until you have a full bowl (IMO, the more the better!) Cover w/plastic wrap & refrigerate overnight. You CAN freeze this a week or so if you use the proper bowl. Let thaw at room temp. approx. 1/2 hour before serving. ************************************************** ************************************************** Bag of frozen raspberries (thaw as much as you'll need) Breyer's Vanilla Ice Cream. Scoop ice cream into pretty dessert dishes and top with thawed raspberries. So easy, so good, so pretty! ************************************************** ************************************************** **** Form several snowballs out of vanilla ice cream and roll them in coconut. Place on cookie sheet in freezer til ready to serve. Choose a pretty bowl, or I like to use a champagne stemmed glasses. Put one ball in each, and pour Creme de Menthe (which is emerald green) over it. Place a red cherry on top, if desired. I like to serve this after Christmas dinner with cookies. Easy, light and people will be impressed. ************************************************** ************************************************** ****** mix together a ONE STEP (we are talking Betty Crocker) angel food cake mix with an 18 oz. can crushed pineapple...juice and all. Dump into lazagna pan (8x13" I think) and bake at 350 for 35 min. Dust with powdered sugar if the spirit moves you. ************************************************** ************************************************** ********* This is a quick dessert recipe of my mom's that I got published in Taste of Home's Quick Cooking a while back: Take a large can of pears, with the juice, and dump it into a casserole dish. Sprinkle a package of blueberry muffin mix over the top, dot it with butter, and bake at about 400 until it's bubbly and the top is browned. SOOOO delicious. ************************************************** ************************************************** **** At a work party one year, a lady brought a delicious cold dip that was just a block of cream cheese and a jar of salsa mixed together. ************************************************** ******************************************* Quick Cherry Pie Simply grease a cake pan. Pour 2 cans of cherry pie filling into it and spread evenly. Then sprinkle a yellow cake mix dry over the top. Dot with margarine. Bake about 20 min. Serve over vanilla ice cream. This is not eact as I don't have it written down. But this is so easy and tastes delicious. ************************************************** ************************************************** Got this recipe here and it's delicious ! My DH devoured a half one before I told him it was fat free LOL! I do it in a glass 9x13 baking dish. I also spray in a little pam then wipe it out with a paper towel. Spread a 20 oz. can of crushed pineapple on the bottom of the pan. Add 1 teaspoon vanilla. Then sprinkle a Betty Crocker angel food cake mix over that ( it must be one step kind) Mix all together well, it will start to foam. Let set 20 minutes to rise. Bake in a preheated oven 20 to 25 minutes. Place on a wire rack to cool. When cool frost with a container of cool whip. (we like low fat ) Cover tightly and refrigerate until ready to serve. ************************************************** ********************************************** fudge (16 oz choc chips, 1 can sweetened condensed milk, vanilla: nuke the chips and milk, stir in vanilla and pour in 8x8 pan- good and fudgy, but not gaggingly sweet) ************************************************** ************************************************** ****** buckeyes (few ingredients- peanut butter, powdered sugar, butter, chocolate chips and parrafin- but time consuming) ************************************************** ************************************************** ****** cookie drops (thank you, taste of home! - a package of oreos and a regular size block of cream cheese. Crush the oreos, mix well with the cream cheese, chill, roll in balls and roll in whatever coating you want; sprinkles, cocoa, powdered sugar- be advised the powdery coating will be absorbed within a day or two.) You can use any type of oreo (even those orange filled halloween ones, hint hint) and it doesn't change the color at all, 'course if you used the coffee flavored ones, you'd get mocha drops, hmmmmmmm ************************************************** ************************************************** **

| Desserts 2 Desserts Quick Fruit Tart I got this recipe from my sister - it's really delicious on a hot, summer day! 1 c. sour cream (regular, lite, non-fat) 1 12 oz. container Cool Whip (regular, lite, non-fat) 1 pkg. instant vanilla pudding (regular, sugar-free) assorted fresh fruit - I use blueberries, strawberries & kiwi 1 flan style cake (available in bread aisle/bakery section of grocery store) Mix the sour cream and Cool Whip; add instant pudding and whisk together. Spread to the edges of the flan and top with fruits. Chill for best flavor. The last time I made this, I couldn't find the flan cake, so I just used the individual shortcakes, like for strawberry shortcake. Also, you can just spoon the filling into a bowl and top it with fruit for an extra low calorie treat! ************************************************** ************************************************** * Ambrosia 1 can pineapple (chunks or tidbits or crushed, your choice), drained 1 can mandarin oranges, drained 1 8 ounce tub Cool Whip Flaked coconut or finely chopped pecans. Or both. What the hey! Mix all ingredients together and serve. I also make chocolate chocolate chip pancakes. 1 cup pancake mix 1 Tablespoon sugar 1/4 cup cocoa (I eyeball the sugar and cocoa, so I'm not sure of the actual amounts.) Add water until batter is desired consistency. Add a handful of chocolate chips. Make pancakes as usual. When done, immediately remove from griddle and sprinkle with chocolate chips, and liberally sprinkle powdered sugar while warm. (It might also be good with finely chopped nuts, too.) Top with a dollop of Cool Whip, sprinkle again with powdered sugar, and enjoy your morning chocolate sugar rush! ************************************************** ************************************************* Diet Coke Cake: One Can of Diet Coke One Chocolate or White Cake Mix Mix together and bake. That's it! Use this all the time when I have something to go to. It's so moist. Place in a greased oblon pan. bake at 350 for 20 minutes. Rice Krispies cereal In a heavy saucepan bring the karo and sugar to a boil, stirring constantly. As soon as it starts to boil, remove from heat and stir in the peanut butter until the mixture is smooth. Add the cereal and stir until well coated. Drop by spoonfuls on wax paper or a greased cookie sheet and let set until cool. Store tightly covered. ************************************************** ************************************************** ********** Another great dessert recipe that is sooooo simple...Begin with a pizza crust, add one can of pie filling and top with a mixture of 1/4c. melted butter, 1/3c. flour, 3T. white sugar, 1T. brown sugar and some cinnamon. Put on top of pie filling and bake @350* until done and drizzle with glaze. I sometimes make 1/2 cherry and 1/2 apple. Everyone loves this and it's easy to make or take some where. ************************************************** ************************************************** ******* snicker salad 4 granny smith apples, washed, and cubed (with skin) 4 snickers bars, sliced 1 3 oz box instant vanilla pudding 1 cup cold milk 3/4 of 8oz. tub of cool whip beat pudding and milk. Mix in cool whip, apples and candy bar pieces. chill and serve. Once all I had was french vanilla pudding, and used that. Bake a german chocolate cake mix as directed, after you take out of the oven poke with holes and pour 1 can sweetend condensed milk, then pour 1 bottle of smuckers caramel ice cream topping cool then frost with 1 tub of cool whip and sprinkle chopped up heath bar pieces on the top...makes a SUPER DUPER MOIST CAKE!!!!

| Desserts 3 Desserts CHOCOLATE CHERRY CAKE Made from 1 box devil's food cake mix, two large eggs, and 1 (21 oz.) can cherry pie filling. ************************************************** ************************************************** ***** PEANUT BUTTER COOKIES Made with 1 cup chunky peanut butter, a cup of sugar, and one egg. That's ALL! Mix the three ingredients, roll little balls, flatten slightly, fork design on them, and bake on parchment paper covered cookie sheets for 10-12 minutes (depends on the humidity around here - or oven quirky-ness) at 375. (you'll know the consistancy you like in a cookie) When you take them out of the oven let them continue to sit on the cookie sheet for a minute or so (cooling somewhat) before you pull the parchment & cookies off to the counter top to cool completely. ************************************************** ************************************************** *********** Easy Summer Salad 1 can lemon pie filling 1 can mixed tropical fruit, drained 1 can mandarin oranges, drained 1 can pineapple chunks, drained 1 c. mini marshmallows Mix together the first four ingredients and chill. Just before serving gently fold in the marshmallows! ************************************************** ************************************************** ********* Easy ice cream dessert Unwrap 1 package of ice cream sanwiches ( the kind with the brown cookie on the outside and vanilla ice cream in the middle) and place them in the bottom of a 9x13 pan. Pour 1 jar of fudge ice cream topping over them. Spread with 1 container of Cool Whip. You can sprinkle any kind of embelishment that you like on top. I grate a frozen Hersheys bar over the Cool Whip. My friend sprinkles hers with crushed M&Ms. Have had it with chopped nuts on top. Cover the pan with foil and return it to the freezer until ready to serve. ************************************************** ************************************************** ******* Dump Cake. Take 1 can of cherry pie filling and put in 13 X 9 pan spread out on bottom, then 1 can of crushed pineapple spread on top of cherries, then spread one box of yellow cake mix (any kind). Slice up 1 stick of butter and dot top of cake mix. Put in oven at 350 degrees for approximately 30-45 minutes (until top is nicely browned). My son hates canned pineapple but loves this. I always get asked for the recipe when I make this and its soooo easy ************************************************** ************************************************** ******* Easy Upside down Peach Cobbler 1 stick butter 1/2 cup milk 1 cup sugar 1 cup flour 1tsp baking powder 1 large can sliced peaches 1/2 cup sugar 1 tsp cinnamon You melt the stick of butter in the bottom of your 9X13 baking dish at 350degrees mix together the milk. sugar and flour and baking powder then pour over the butter evenly in bottom of pan, then pour the can of sliced peaches over the batter mixture and sprinkle with the 1/2 cup of sugar and tsp of cinnamon, bake in a 350 degree oven for 1 hour, the crust rises to the top and this is a very great tasting cobbler and I love the ease of making it! I have also done the same thing with cherry pie filling and it worked great Tips: I have used the small can like 15oz size? or the larger can, I like it best with more peaches in it so normally I put in 2 cans of regular 15oz size or 1 big can like a 26-29oz and do not drain, dump the peaches and juice into the pan ************************************************** ****************************************** Butter Pecan Pound Cake 1 box Betty Crocker Butter Pecan Cake Mix 1 small box instant coconut cream pudding mix 4 eggs 1 cup oil Mix just until mixed together. Add 1 cup hot water (from tap). Mix until fluffy. Grease bundt pan well. Bake at 325 degrees for 45 minutes. ************************************************** ************************************************** ******** Butterfinger pie ________________________________________ My daughter brought this recipe home from her trip in the mountains. 1-12 ounce Tub of Cool Whip 2 full size butterfinger candy bars 1 graham cracker crust Crush the 2 candy bars and mix with cool whip and put into crust and put in freezer for 1 hour. Or both. What the hey! Mix all ingredients together and serve. My family also makes this ambrosia but instead of Cool Whip we use (and it sounds funny but it is so yummy!) a container of sour cream. And then we add mini marshmallows. Put in fridge to set up and the marshmallows get mushy. YUM! ************************************************** ************************************************** ********* Coconut Delight 2 sleeves of Ritz-type crackers 2 sticks margarine Combine in bottom of 9x13 1/2 gallon vanille ice cream,softened 3 small boxes of cocnut cream pudding mix 2 cup milk Mix altogether. Refrigerate for 30 minutes. Top with 12 oz Cool Whip. You can substitute any flavor of pudding and rename it. ************************************************** ************************************************** * Almond Roca 1 sleeve of saltine crackers 1 cup butter NOT margarine, won't work 1 cup brown sugar 1 package chocolate chips 1/2 - 1 cup chopped almonds Preheat oven to 400 degrees. Cover a cookie sheet with foil and place crackers over surface, do not overlap. Combine butter & sugar and bring to a boil, approx 3 mins. Pour over crackers and bake about 5 minutes or until crackers "float". Remove from oven and top with chocolate chip and almonds. Chocolate will melt. Let Cool. ************************************************** ************************************************** ********** This is a great cake and so simple to make: 1 Box Butter Pecan Cake Mix - Betty Crocker 1 Can Coconut Pecan Icing 4 eggs 1 cup milk 2/3 cup of oil Mix all the above together in bowl (yes you put the icing in the cake mix) and mix either with spoon or on low with mixer. Bake at 350 for approx 50 min (depending on your oven) in a bundt pan. This cake doesn't really need icing on it but if you want a glaze you can use confectionary sugar with a little milk and dash of vanilla and drizzle on cake. This cake is so sweet and moist ************************************************** ************************************************** ********** Peanut Butter Fudge Recipe courtesy Alton Brown, Food TV Show: Good Eats Episode: Fudge Factor 1 cup butter, plus more for greasing pan 1 cup peanut butter 1 teaspoon vanilla 1 pound powdered sugar Microwave butter and peanut butter for 2 minutes on high. Stir and microwave on high for 2 more minutes. Add vanilla and powdered sugar to peanut butter mixture and stir to combine with a wooden spoon. Pour into a buttered 8 by 8-inch pan lined with waxed paper. Place a second piece of waxed paper on the surface of the fudge and refrigerate until cool. Cut into 1-inch pieces and store in an airtight container for up to a week. ************************************************** ************************************************** ********** Coconut "Cool Whip" Cookies 1 8oz. container "cool whip", thawed 1 box coconut cake mix, (can use any flavor but coconut is awesome!) 1 egg Mix together. | Main Dishes Main Dishes I love taking wings or chicken parts and just dousing them with equal parts oil, terriyaki and baking until all of the liquid is absorbed and chicken skin is browned and crispy.************************************************** ************************************************** ********* French Onion Soup Augratin 2 large onions, sliced thinly 2 cans Campbell's Beef Broth 2 pieces sliced French, toasted Sliced or shredded cheese (mozzarella, or Provolone) Take your onions and saute them in some butter or margarine until they are translucent and have "sweated" out their juices. (Basically cook them to death, but don't brown them! ) Then open the Beef Broth and put it in a large saucepan and add the onions to the saucepan and heat over medium-low heat until heated through. Take your toasted bread and place them in your serving bowl with the cheese on top. Then divide your soup between the bowls and serve. Serves 2. ************************************************** ************************************************** ******** For dinner sometimes I take a large roast and put it in the crockpot and pour a large jar of spaghetti sauce overtop and add a few spices like italian seasoning, garlic, salt and pepper and cook it all day. Turns out like a swiss steak almost. Sometimes we eat it on rolls like barbeque and sometimes we eat it just on a plate like swiss steak. Since it simmers in the sauce all day, its fork tender. Really good! ************************************************** ************************************************** ********* I make a 4 ingredient sheperds pie that probably isn't truly sheperds pie, but that's what mom always called it. 1lb ground beef 1 package fresh mashed potatoes from the refrigerated case 1 can corn 1-2 cups shredded cheddar Flatten ground beef into bottom of 8x8 square baking dish. Bake at 350 til done thru. Drain. Top with entire package of mashed potatoes, then top that with entire can of drained corn. Put back in the oven til heated thru. Top with 1-2 cups shredded cheddar (I use the whole 2 cup package - if you're not into cheese you can get away with one cup). Slide back in the oven til entirely melted. Cool, cut, and serve. I take a package of chicken parts or even just drumsticks, put them in the crockpot and pour a bottle of barbecue sauce over it, and cook on low all day. Everyone RAVES about how good it is - even my picky FIL! Takes all of about 2 minutes in the AM to get ready - my kind of meal!! ************************************************** ************************************************** *** 'Hamburger Crumble' like sloppy joes 1 lb hamburger browned with some diced onions, drain, add ketchup, dry mustard and sour cream. Mix well. Serve over rice, slice of bread or on hamburger rolls. ************************************************** ************************************************** ******* BBQ's (or made rights, sloppy joes, loose meat sandwiches-I'm sure there are other names for these) Brown hamburger with onion. Drain grease and mix in ketchup until right consistency for BBQ's. ************************************************** ************************************************** **** Hamburger Casserole: Lightly pat 1 to 1 1/2 lbs of ground chuck in bottom of casserole dish. sprinkle on some chopped onions, layer of sliced potatoes, layer of veggies ( sometimes I use mixed veggies or corn or green beans, use what your family likes ) and top with a can or two of Campbells Tomato Soup. You can adjust the amounts of ingredients, more or less potatoes, veggies, meat. Bake 350 for l 1/2 hrs. maybe more. Stick with sharp knife to see if potatoes are done. ************************************************** ************************************************** ******* I buy cubed steaks and put them in the crock pot with stewed tomatoes over them. Simple and even my very picky son loves this. ************************************************** ************************************************** ***** Take 1 pound of boneless chicken breast and slice into 1/4 to 1/2 inch slices. Brown in a nonstick pan with 1 TBSP of olive oil. Add a 16 oz. jar of your favorite salsa. Cover and cook until the chicken is cooked (about 15 minutes). Serve in tortillas with lettuce, diced tomato, sour cream or any of your favorite toppings. Can also be served over rice. Just remember, when the salsa cooks cooks down, it gets hotter, so if you don't like really spicy food, buy a mild salsa. Grill chops directly over heat for about 8 to 10 minutes, turning once. Serve desired number of chops for dinner. Wrap and refrigerate remaining chops for up to 3 days. Preheat your oven to 500. Wash and dry a whole chicken (I usually use about a 4 pound chicken), after removing the stuff in the cavity. Rub inside and out with sea salt. Turn down the oven to 425 and cook the chicken until the juices run clear (usually about an hour and 15 minutes). I usually cook mine in a cast iron skillet. If you don't use too much salt, you can use the juices for a gravy and you don't have to dirty another pan. | Main Dishes 2 Main Dishes Crockpot Pickled RoastPut an inexpensive beef roast into a crockpot, add a large quartered onion, pour in about a cup or more to taste of pickle juice (leftover juice from a jar of pickles, pickled vegetables, or jalepenos), pepper to taste, and water. Don't add salt as the pickle juice contains enough already. Cook as you normally would. Nooo, it doesn't taste like pickles but does have a slight different taste and the pickle juice helps tenderize the beef. Lay chicken pieces in a greased baking dish, in a single layer. Mix together an envelope of Onion Soup Mix and a 6 oz. container of frozen concentrated orange juice (not reconstituted). Remove garlic from pan. Add more butter, about 1/2 C and while it's melting, flour each chicken strip and add to the pan. Cook till done, lightly brown on both sides, remove chicken strips as they become done. When all chicken is done, add back all pieces of chicken and the chicken broth. Stir well scraping bottom of pan. Bring to boil, then drop heat to low till the flour on the browned chicken thickens the bouillon into a gravy. Serve over rice or potatoes. ************************************************** ************************************************** ****** Marinated flank steak Mix 1 bottle of Italian dressing with 2 Tblspns of soy sauce. Marinate a flank steak in it overnight. Broil until brown on the outside and light pink in the middle. ************************************************** ************************************************** ********** Italian sausage and peppers: 1 to 1 1/2 lbs of mild or hot italian sausage (fresh, in casing) Put in bowl ( I used tupperware stack cooker large bowl) and either:#1 add 1 inch water, or #2, stack the colendar in (no water needed this way) cover, and cook on high for 7-8 minutes. Drain water/and/or fat. Slice sausgages into 4-6 inch slices. Put back into bowl. Slice and add 2 green peppers (or add other colored peppers, I use whatever is on sale!) Slice and add one large or two medium onions. Finally, open and pour one 10 oz can of stewed tomatoes on top of everything. Cover and cook for 15 minutes on high. This is even BETTER than when I used to do it stove top style, all day long, with tomato paste and a bunch of seasonings, etc. Today, to add to it, I used gonella bread buns, and I laid a slice of mozzarella cheese into the bun before I filled it with my sausage, peppers, onions and tomatos. IT WAS THE MOST TENDER, TASTY sausage we've ever eaten! Pork Roast 3 cloves garlic, peeled Adobo seasoning 1/4 to 1/3 cup lemon juice Make 3 slits in top of pork roast, Place a garlic clove in each. Sprinkle roast with Adobo seasoning. Pour lemon juice over top. Place in a roasting pan that has been sprayed with PAM and roast at 350 for 2-3 hours or till done. ************************************************** ************************************************** ********* My mom's goulash...I don't have actual measurements, we just kind of adjust according to how many it needs to feed.... slice smoked sausage, chop some green bell pepper. Brown sausage with bell peper. Cook and drain some elbow macaroni. Mix all together, add spaghetti sauce-we actually like this best with cheapo cans of traditional flavor Del Monte spaghetti sauce, but use whatever, homemade, jarred, whatever kind you want). Just make sure you put enough sauce in so it doesn't get dry. Heat through. Then brown some chicken (you can add onions, but nothing else). Throw some Orange conserve or orange marmalade on the chicken, turn down heat for about 5 minutes, add rice for another 5 minutes. Here it is: Easy Bean Chowder 2 cans Northern Beans 1 can Butter Beans 1 can potatoes, diced into small cubes 1 can carrots, diced into small cubes I cup chicken broth (made with bullion, or base) 1 tsp minced onions 1/4 cup chopped celery (optional) 1 cup diced smoked sausage, ham, or kielbasa salt and pepper to taste I turn it to low and cook it all day. If it was a Saturday, I cooked it on high for about 3 hours. When it was done, I served it over fried cornbread. Add frozen or thawed pre-cooked meatballs. Stir meatballs to combine with soup mixture. Cover with waxed paper, microwave about 3 minutes or according to pkg directions; or till heated thru. Meanwhile, boil noodles till done; drain. Add meatballs & soup mixture, stirring to combine in large pot or Dutch oven. NOTE: You could embellish this dish, if you prefer, by mixing in sour cream in place of water & a dash of paprika to soup mixture, &/or adding snipped fresh Italian flat-leaf parsley or onion or garlic powder. In small bowl mix chicken, 3/4 cup of the cheese,garlic salt and mayonnaise. Spread on bread. Top with tomato slices, sprinkle with remaining cheese. | Sides Sides This one is popular in the South and even Martha Stewart was wowed by it.Just open a can of Bush's Baked Beans (I prefer the original flavor), fish out the bit of bacon fat (this will give it away if someone comes across it), decorate with a little precooked bacon and heat in microwave. Slice cumcuber and onions, sprinkle with salt. Let set in fridge for an hour or longer, rinse salt off and pour in Cumcumber Ranch dressing, and mix to coat everything. (This is great for picnics). ************************************************** ************************************************** ********* Make Betty Crocker Suddenly pasta salad Rach and Bacon according to directions.
