Wacky Wednesday

We're in the middle of that snow storm all you midwesterners had the other day. I do have to say that it's absolutely beautiful! Just glistening!

Anyhow, I get out of cooking tonight! My IL's are taking our family out to dinner. They say it's payment for us plowing their driveway and all the odd's and ends we do. Thought it was very sweet!

We didn't really get any of the ice we were supposed to last night, but the temperatures are still very chilly!

We are having Chicken Breasts stuffed with Broccoli and Swiss Cheese, with Fettucini or Linguini, French Bread and Salad.

It is sweet of them...and it's sweet of you guys to do what you did. Hope you have a great time.
BTW, I tried the 'Crash Potatoes'. I used small red potatoes, drizzled with butter and sprinkled with
a little shredded cheese (Cheddar/Parmesan) just before they were done. They were very good.

Grilled Salmon/Jalapeno Lime Butter
Rice
Steamed Vegetables

We're getting the snow now...started last night and we're under a warning until 11pm tonight. I think I'm going to make chicken bundles tonight, with a salad on the side.

I think we're having tuna casserole & peas tonight. There's also brownies left that I made yesterday.

We are having a penne pasta bake with veggie packed sauce, topped with Follow Your Heart Mozzarella.

If DH goes to the store we will be having peanut butter cup brownies for dessert (yum!). Its way too easy -just take your usual brownie mix ( store bought works fine) and you put half in the pan, set in some reeses pb cups then top with the rest of the batter.

We were hit with a lot of snow last night and this morning . The temperature really isn't that chilly today it's 19 degrees. It feels like a heat wave from what we had the last couple of weeks .

Tonight we are having...

Roast chicken
Herb roasted chicken whole grain rice
Stuffing
Green beans

I might try making a "Golden Rum Cake" bundt cake for dessert tonight. I found the recipe on allrecipes and it sounds soooo good .

It is supposed to be 66 today and I am FREEZING!!!! I actually have my heater on right now. I am originally from Ohio and I don't think I could ever survive back there. I tell all my relatives they can keep the snow and cold. I will suffer through the HOT summers here in AZ(which isn't all that bad since we have a cabin in the mountains where it is 20-30 degrees cooler than here in desert).

Snowed in here too. I am so ready for spring. DH saw two robins the other day. I told him those birds were dumb to come here just yet. Hopefully that's a sign that things will be getting warmer soon.

Snow and ice here too.
We had various left overs and I put some chicken nuggets and fries in the oven. I guess I am in a hibernating mood today because I didn't feel like cooking anything.

We had snow this morning and now it is raining/sleeting. Tonight we had spaghetti and meatballs. I also tried the new garlic butter cresent rolls by pilsbury they were pretty good.

I made the chicken and stuffing casserole that has been talked about here the last couple of days. My son said "it was solid", I thought it was too salty but it wasn't too bad.

Sure, here it is…

1-2 jalapenos
½ stick unsalted butter
2 teaspoons fresh lime juice
1 teaspoon minced cilantro or chives

I roast a couple of jalapenos (you could substitute with poblano), then peel/seed and mince them.
Place the butter, lime juice, cilantro/chives and 1 tablespoon of the minced pepper in a blender and
pulse until well combined. Transfer the mixture to a piece of parchment/wax paper and form as you
would a compound butter and then refrigerate until about 25-30 minutes prior to using.

Sometimes I marinate the salmon and sometimes I don’t but in either case, just before (or immediately
after) removing the salmon from the grill I top it with a couple of slices of the butter.
