Killer pickle recipe

Got this from a co-workers mom...they are so good.

6 Month Refrigerator Pickles

In Large Bowl:

7 cups thinly sliced cucumbers (leave skins on)
1 cup thinly sliced green peppers
1 cup thinly sliced onion


In another bowl mix together:

2 TBSP Canning or Kosher salt
1 tsp celery seed
1 cup vinegar
2 cups white sugar


Pour liquid over cucumbers, peppers and onions. Mix together well. **It will look like there is not enough liquid, but cover and let stand refrigerated overnight. The next day put pickles, peppers and onions in jars; pour remaining liquid over till covered. Keep refrigerated up to 6 months.

i have never made pickles but am willing to try. Do you have to sterilize the jars? Are they like dill pickles, sandwich pickles, sweet pickles etc?

I don't know how many jars it makes but the lady told me she always doubles or triples the recipe. Sorry!

These are like a sweet pickle. You wouldn't need to sterilize the jars, just washing with hot soapy water would be ok I would think. She didn't specify to sterilize the jars so I would say you don't need to.

I would think the green tomatoes would be ok.

Sounds like the Bread and Butter pickle recipe that I have. I use those small pickling type cucumbers.

Mine are to be stored in the refrigerator and not to be canned.

Compare them to fresh refrigerator style pickles like Claussen pickles are.

I've never made these, but since there's 9 cups of veggies, I would guess that it would make 4-5 pints of pickles.

The lady gave me a small jar to take home. My oldest had some last night and she loved them so much she asked if she could have some for breakfast.

And is there a problem with pickles for breakfast????? I'm heading to the farmer stand for some pickle cukes and some strawberries I have the stuff to make strawberry jam. And then find room in the frig for 5 jars - or should I do that first?

My ex's wife gave me a recipe that is almost identical that is made in a gallon jar and kept in the refrigerator. It keeps for a LONG time. When I made it, as the contents of the jar was reduced I put into a smaller jar. I know I have kept it for nearly a year and it doesn't go bad as long as it's refrighrated.
We sometimes used it as a side with a meal and sometimes as a snack.
I like to add a little sugar to the individual dish, a dash or two of olive oil and chop a small tomato into it.

Do you have to use pickling cucumbers or can you use the everyday cucumbers that are on sale right now? (I happen to have 5 in the fridge.)

btw my kids would eat them for breakfast too, I'm sure.

I'm pretty sure you can use any cuke, the lady told me if I have slices leftover, just to put them on my salad.

I used the regular cukes too plus one red and one yellow bell pepper. They're purdy! Will know tomorrow if we like them ........ which I'm sure we will.

Fit perfectly into an 80 oz vlasic pickle jar.
