I made what my boyfriend referrs to as Thanksgiving casserole

Its really simple

Turkey breast from the deli dept sliced on the thick side
instant or leftover mashed potatoes
1 box stove top stuffing prepared
any veggies that you want
jar of turkey gravy


Layer all ing in a casserole dish and cover with gravy bake for 25-30 min

I am making a salad and will also have cranberry sauce on the side

I've got a roast in the crockpot, too, with cream of mushroom and onion soup. I'll make mashed potatoes and peas with it.

I used to make something similar. Take a slice of turkey and roll up some stuffing. Repeat till all stuffing/turkey is gone. Pour a bit of gravy in the baking dish, lay the turkey rolls side by side and cover with remaining gravy. Bake till hot and bubbly.

We had meatloaf, parsley buttered yukons, creamy corn and biscuits.

For dessert we're stopping at the local ice cream stand after youngest DS game.

Youngest dd is still at camp, oldest dd has soccer, DH is out of town until Thursday, so it looks like it's just me. I am going to have leftover Chicken-Berry Salad from last night. It was really good.

I can't believe oldest is going to have soccer with 110 heat index. I will be sending a small cooler filled with a lot of ice, a little water and some wash clothes, so she can cool off during water breaks. I'll make sure she takes a Gaterade and a piece of fruit, too. She'll be there for 3 hours! Ugh!!! I did let her skip last night.
